Chili (Calico Beans)


Got this recipe from a friend and adapted it a bit!

Ingredients:
  • 1 lb. hamburger
  • 1/4 lb. bacon, chopped  (turkey bacon works fine too)
  • 1/2 c. chopped onion
  • 1 12-ounce can dark red kidney beans
  • 1 12-ounce can lima beans
  • 1 12-ounce can pork 'n beans
  • 1 12-ounce can black beans
  • 1 sm. can of rotell (or generic tomatoes and green chiles)
  • 1/2 c. brown sugar
  • 2 Tbsp. vinegar
  • 1/2 c. Ketchup
  • 1 tsp. dry mustard
  • 1 c. cooked macaroni noodles (or other pasta)
  • 1 bottle of dark beer (optional)
  • 2-4 sm. pieces of dark chocolate (optional)

Directions:
  1. Brown the hamburger and bacon with chopped onion and garlic and season to taste.
  2. Cook noodles until almost done (leave them a little firm since they will continue to cook in the crock pot)
  3. Combine all the  ingredients in a crockpot.  Add the meat and pasta.
  4. Cook on for 30-60 minutes until heated through and allowed time to simmer.
  5. Serve with a dollop of sour cream and a piece of corn bread!
I've even added frozen corn to the chili before.  Make it what you want!
