Found delicious and healthy recipe on Food Network, supplied by Ellie Krieger (she's a nutritionist too). See http://www.foodnetwork.com/recipes/ellie-krieger/chicken-and-bean-burrito-verde-recipe/index.html. It was SO GOOD, easy to make, and had absolutely no cheese!
Ingredients:
- Olive Oil
- 1 small onion, diced
- Garlic (about 2-4 cloves)
- 1/2 tspn. ground cumin
- 1 15-ounce can of low-sodium white beans (Northern Beans), rinsed and drained
- 1/2 c. low-sodium chicken broth
- 1/2 tsp., plus a punch, of salt
- 2 c. lightly packed shredded romaine lettuce (about 3 large leaves)
- 1/3 c. fresh cilantro leaves, roughly chopped
- 2 tsp. fresh lime juice
- Freshly ground black pepper
- Whole wheat flour tortillas
- 2 c. cooked and shredded chicken (skinless and boneless)
- 1 jalapeno, finely diced
- 1 ripe avocado, thinly sliced
- 1/2 c. tomatillo or other salsa (optional)
- 1/2 c. low-fat plain Greek-style yogurt (in place of sour cream!)
Directions:
- In oil, cook onion and garlic, then add cumin and mix.
- Then add beans, broth, salt, and pepper. Cook until warmed.
- Then transfer bean mixture to food processor (or blender) and process until smooth.
- In a small bowl, put the lettuce, cilantro, splash of olive oil, lime juice, pinch of salt, and pepper. Mix and set aside.
- Build burrito: spread bean mixture onto middle of tortilla, then sprinkle jalapeno on top. Add chicken, lettuce mixture, a couple slices of avocado, and a dollop of Greek Yogurt. If wanted, add salsa too.
- Enjoy!
